On the weekends, I’m torn — I love big decadent breakfasts. You know, the kind with two different types of eggs, a side of bacon, and something sweet like waffles, pancakes, or french toast as “breakfast dessert”. The only masalah is that on the weekends, I also like to sleep in as late as possible. And unfortunately, big decadent weekend breakfasts usually involves getting up early to prep and cook all those things.

I’m always looking for a compromise between the two, which is why I love this Dutch Baby pancake recipe so much. With a blender, the batter comes together in 20 seconds – less if you’ve got a workhorse like Wolf Gourmet’s incredibly awesome and powerful one. You literally throw all the ingredients in the blender, whirl it all up, pour it into a cast iron pan to bake for 15 minutes, and BOOM! A fancy, decadent breakfast with the smallest amount of work possible. I dig it.
